Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt to taste
  • Pepper to taste

Steps

  1. Rinse the quinoa under cold water
  2. In a pot, combine quinoa and water, bring to a boil, then reduce to a simmer and cover for 15 minutes
  3. Fluff the quinoa with a fork and let it cool
  4. In a large bowl, mix the chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and parsley
  5. Add the cooled quinoa to the vegetable mix
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper
  7. Pour the dressing over the salad and toss gently to combine
  8. Let the salad sit for 10 minutes to allow flavors to meld
  9. Serve chilled or at room temperature
