Ingredients
- 1 block firm tofu, pressed and cubed
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 carrot, julienned
- 2 cups broccoli florets
- 1 zucchini, sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger, grated
- Cooked rice or noodles for serving
Steps
- Heat vegetable oil in a large skillet over medium heat
- Add cubed tofu and sauté until golden brown, about 5-7 minutes
- Remove tofu from the skillet and set aside
- In the same skillet, add garlic and ginger; sauté for 1 minute until fragrant
- Add bell pepper, carrot, broccoli, and zucchini; stir-fry for 5-6 minutes until vegetables are tender-crisp
- Return tofu to the skillet and pour in soy sauce and sesame oil; toss to combine
- Cook for an additional 2 minutes to heat through
- Serve over cooked rice or noodles
- Garnish with sesame seeds if desired
