A refreshing and protein-packed chickpea salad wrapped in crunchy lettuce leaves.
Ingredients
- 1 can chickpeas, drained and rinsed
- 1/2 cup diced cucumber
- 1/2 cup diced tomatoes
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 head of lettuce, leaves separated
Steps
- In a large bowl, mash the chickpeas lightly with a fork
- Add diced cucumber, tomatoes, red onion, and parsley to the bowl
- Drizzle lemon juice and olive oil over the mixture
- Season with salt and pepper to taste
- Mix all the ingredients until well combined
- Spoon the chickpea salad into individual lettuce leaves
- Wrap the lettuce around the filling to create a handheld sandwich
- Serve immediately, or refrigerate for up to an hour before serving
