Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/2 cup diced cucumber
  • 1/2 cup diced tomatoes
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 head of lettuce, leaves separated

Steps

  1. In a large bowl, mash the chickpeas lightly with a fork
  2. Add diced cucumber, tomatoes, red onion, and parsley to the bowl
  3. Drizzle lemon juice and olive oil over the mixture
  4. Season with salt and pepper to taste
  5. Mix all the ingredients until well combined
  6. Spoon the chickpea salad into individual lettuce leaves
  7. Wrap the lettuce around the filling to create a handheld sandwich
  8. Serve immediately, or refrigerate for up to an hour before serving
