
Cauliflower Mac and Cheese

A creamy and cheesy low-carb alternative to traditional mac and cheese, using cauliflower instead of pasta.
Ingredients
- 1 head cauliflower, cut into florets
- 2 cups shredded cheddar cheese
- 1 cup cream cheese, softened
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup chopped green onions (optional)
Steps
- Preheat oven to 350°F (175°C)
- Steam or boil cauliflower florets until tender, about 5-7 minutes
- In a large bowl, combine cheddar cheese, cream cheese, heavy cream, Parmesan cheese, garlic powder, onion powder, salt, and pepper
- Add the cooked cauliflower to the cheese mixture and stir until well combined
- Transfer the mixture to a greased baking dish and spread evenly
- Drizzle olive oil over the top and sprinkle with additional cheese if desired
- Bake in the preheated oven for 25-30 minutes until bubbly and golden
- Remove from the oven and let cool for a few minutes
- Garnish with chopped green onions before serving
