Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup spinach, fresh
- 1/2 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese, grated (optional)
Steps
- Heat olive oil in a large skillet over medium heat
- Season chicken breasts with salt and pepper, then add to the skillet
- Cook chicken for 6-7 minutes per side until browned and cooked through
- Remove and set aside
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant
- Stir in heavy cream, Italian seasoning, and sun-dried tomatoes
- Bring to a simmer
- Add fresh spinach and cook until wilted
- Return chicken to the skillet and coat with the sauce
