Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup spinach, fresh
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese, grated (optional)

Steps

  1. Heat olive oil in a large skillet over medium heat
  2. Season chicken breasts with salt and pepper, then add to the skillet
  3. Cook chicken for 6-7 minutes per side until browned and cooked through
  4. Remove and set aside
  5. In the same skillet, add minced garlic and sauté for 1 minute until fragrant
  6. Stir in heavy cream, Italian seasoning, and sun-dried tomatoes
  7. Bring to a simmer
  8. Add fresh spinach and cook until wilted
  9. Return chicken to the skillet and coat with the sauce
  10. Simmer for an additional 2-3 minutes
  11. Serve warm, topped with grated Parmesan if desired
