Ingredients
- 1 cup cooked chickpeas
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Steps
- Heat olive oil in a large pan over medium heat
- Add minced garlic and sauté until fragrant, about 1 minute
- Add sliced bell pepper, zucchini, and carrot; cook for 5-7 minutes until tender
- Stir in cooked chickpeas, soy sauce, cumin, salt, and pepper
