Ingredients

  • 1 cup cooked chickpeas
  • 2 tablespoons olive oil
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Steps

  1. Heat olive oil in a large pan over medium heat
  2. Add minced garlic and sauté until fragrant, about 1 minute
  3. Add sliced bell pepper, zucchini, and carrot; cook for 5-7 minutes until tender
  4. Stir in cooked chickpeas, soy sauce, cumin, salt, and pepper
  5. Cook for an additional 5 minutes, stirring occasionally
  6. Remove from heat and garnish with fresh cilantro
  7. Serve warm over rice or quinoa
