Ingredients
- 4 boneless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup quinoa
- 2 cups chicken broth
- 1 cup steamed broccoli (optional)
Steps
- Preheat the oven to 400°F (200°C)
- In a bowl, mix olive oil, garlic, lemon juice, lemon zest, oregano, salt, and pepper
- Place chicken breasts in a baking dish and pour the marinade over them, ensuring they're well coated
- Bake chicken for 25-30 minutes or until cooked through
- While the chicken is baking, rinse the quinoa under cold water
- In a saucepan, bring chicken broth to a boil and add quinoa
- Reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy
- If using, steam the broccoli during the last 5 minutes of the quinoa cooking time
- Once chicken is done, let it rest for a few minutes before slicing
- Serve the chicken over quinoa with steamed broccoli on the side
