Ingredients

  • 4 boneless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup quinoa
  • 2 cups chicken broth
  • 1 cup steamed broccoli (optional)

Steps

  1. Preheat the oven to 400°F (200°C)
  2. In a bowl, mix olive oil, garlic, lemon juice, lemon zest, oregano, salt, and pepper
  3. Place chicken breasts in a baking dish and pour the marinade over them, ensuring they're well coated
  4. Bake chicken for 25-30 minutes or until cooked through
  5. While the chicken is baking, rinse the quinoa under cold water
  6. In a saucepan, bring chicken broth to a boil and add quinoa
  7. Reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy
  8. If using, steam the broccoli during the last 5 minutes of the quinoa cooking time
  9. Once chicken is done, let it rest for a few minutes before slicing
  10. Serve the chicken over quinoa with steamed broccoli on the side
