
Quinoa Stuffed Bell Peppers

Ingredients
- 4 large bell peppers
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
- 1 cup diced tomatoes
- 1/2 cup shredded cheese (optional)
Steps
- Preheat your oven to 375°F (190°C)
- Cut the tops off the bell peppers and remove the seeds
- In a pot, combine quinoa and vegetable broth; bring to a boil
- Reduce heat, cover, and simmer for 15 minutes until quinoa is fluffy
- In a large bowl, mix cooked quinoa, black beans, corn, cumin, chili powder, salt, pepper, and diced tomatoes
- Stuff each bell pepper with the quinoa mixture, pressing down gently
- Place stuffed peppers upright in a baking dish
- Cover with foil and bake for 25 minutes
- If using cheese, uncover and sprinkle on top; bake for an additional 5-10 minutes until melted
- Serve warm and enjoy!
