A colorful and nutritious vegetable stir-fry served over fluffy quinoa.
Ingredients
- 1 cup quinoa
- 2 cups water
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Chopped green onions for garnish
Steps
- Rinse the quinoa under cold water
- In a pot, bring water to a boil and add quinoa
- Reduce heat, cover, and simmer for 15 minutes or until all water is absorbed
- In a large skillet, heat olive oil over medium heat
- Add garlic and sauté for 1 minute until fragrant
- Add bell pepper, zucchini, broccoli, and carrot; stir-fry for 5-7 minutes until tender
- Stir in soy sauce and sesame oil; mix well
- Fluff the cooked quinoa with a fork and divide among serving plates
- Top quinoa with the vegetable stir-fry
- Garnish with chopped green onions
