Ingredients
- 1 cup rolled oats
- 1 cup milk
- 1/3 cup honey
- 1/4 cup vegetable oil
- 1 large egg
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
Steps
- Preheat the oven to 375°F (190°C)
- In a bowl, combine rolled oats and milk
- Let it sit for 10 minutes
- In another bowl, whisk together honey, vegetable oil, and egg until smooth
- Stir the oat mixture into the honey mixture until well combined
- In a separate bowl, mix flour, baking powder, salt, and cinnamon
- Add the dry ingredients to the wet ingredients and stir until just combined
- Grease a muffin tin or line with paper liners
- Pour the batter into each muffin cup, filling them about 2/3 full
- Bake for 20-25 minutes or until a toothpick comes out clean
- Let cool in the pan for 5 minutes, then transfer to a wire rack
