Ingredients
- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/2 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Steps
- Preheat the oven to 350°F (175°C)
- Line a muffin tin with paper liners or grease with cooking spray
- In a large bowl, combine the mashed bananas, honey, applesauce, eggs, and vanilla extract
- Mix in the rolled oats, baking powder, baking soda, cinnamon, and salt until just combined
- Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean
- Remove from the oven and let the muffins cool in the pan for 5 minutes
- Transfer the muffins to a wire rack to cool completely
