Ingredients

  • 1 lb chicken breast, diced
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Steps

  1. Heat olive oil in a large pot over medium heat
  2. Add chopped onion and garlic; sauté until softened
  3. Stir in diced chicken; cook until browned on all sides
  4. Add rice, chicken broth, thyme, rosemary, salt, and pepper; bring to a boil

  6. Stir in frozen peas; cover and cook for an additional 5 minutes
  7. Remove from heat and let sit for 5 minutes before serving
  8. Fluff rice with a fork and serve warm
