Ingredients

  • 4 chicken breasts
  • 3 tablespoons olive oil
  • 2 lemons (juiced and zested)
  • 4 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups broccoli florets
  • 2 cups bell peppers (sliced)
  • 1 cup cherry tomatoes

Steps

  1. Preheat the oven to 400°F (200°C)
  2. In a bowl, mix olive oil, lemon juice, lemon zest, minced garlic, thyme, oregano, salt, and pepper
  3. Marinate the chicken breasts in half of the mixture for at least 15 minutes
  4. On a baking sheet, toss broccoli, bell peppers, and cherry tomatoes with the remaining marinade
  5. Spread the veggies in a single layer and place the marinated chicken on top
  6. Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender
  7. Remove from the oven and let it rest for a few minutes
  8. Slice the chicken and serve with roasted vegetables
  9. Garnish with fresh herbs if desired
