Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup broccoli florets

Steps

  1. Preheat the oven to 400°F (200°C)
  2. In a small bowl, mix olive oil, garlic, lemon juice, lemon zest, oregano, salt, and pepper
  3. Place chicken breasts in a baking dish and pour the marinade over them
  4. Bake the chicken for 25-30 minutes or until cooked through

  6. In a saucepan, combine rice and chicken broth, bring to a boil, then reduce to low heat and cover
  7. Cook for 15 minutes or until rice is tender and liquid is absorbed
  8. Steam the broccoli until bright green and tender, about 5 minutes
  9. Serve the chicken over the rice, with steamed broccoli on the side
