Ingredients

  • 4 whole wheat tortillas
  • 1 cup hummus
  • 1 cup shredded carrots
  • 1 cup cucumber, sliced
  • 1 cup bell peppers, sliced
  • 1 cup spinach leaves
  • 1/2 cup cherry tomatoes, halved

Steps

  1. Spread 1/4 cup of hummus on each tortilla
  2. Layer shredded carrots, cucumber, bell peppers, spinach, and cherry tomatoes on top of the hummus
  3. Roll each tortilla tightly from one end to the other
  4. Cut each wrap in half to reveal the colorful filling
  5. Serve immediately or wrap in foil for a lunchbox treat
