Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups spinach, chopped
  • 1 zucchini, sliced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 12 ounces pasta of choice
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Steps

  1. Heat olive oil in a large pot over medium heat
  2. Add chopped onion and sauté until translucent, about 5 minutes
  3. Stir in minced garlic and diced bell pepper; cook for another 2 minutes
  4. Add the sliced zucchini, spinach, diced tomatoes, vegetable broth, and Italian seasoning
