Juicy grilled chicken marinated in lemon and garlic, served with a side of roasted vegetables.
Ingredients
- 4 chicken breasts
- 3 tablespoons olive oil
- 2 lemons (juiced)
- 4 cloves garlic (minced)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 2 cups mixed vegetables (bell peppers, zucchini, carrots)
- 1 tablespoon balsamic vinegar
Steps
- In a bowl, mix olive oil, lemon juice, garlic, salt, pepper, and oregano
- Add chicken breasts to the marinade and coat well
- Refrigerate for 30 minutes
- Preheat the grill to medium-high heat
- Toss mixed vegetables with balsamic vinegar, salt, and pepper
- Grill the chicken for 6-7 minutes per side until cooked through
- During the last 5 minutes of grilling, add the vegetables to the grill
- Remove chicken and vegetables from the grill and let rest for a few minutes
- Slice the chicken and serve with the grilled vegetables
