Ingredients

  • 1 block firm tofu, cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 2 carrots, julienned
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Steps

  1. Press the tofu to remove excess moisture and cut into cubes
  2. Heat olive oil in a large pan over medium heat
  3. Add cubed tofu and cook until golden brown, about 5-7 minutes
  4. Stir in garlic and ginger; sauté for 1 minute until fragrant
  5. Add bell pepper, zucchini, broccoli, and carrots; stir-fry for 5-7 minutes until vegetables are tender-crisp
  6. Pour soy sauce over the veggies and tofu; stir well to combine
  7. Cook for an additional 2 minutes to heat through
  8. Remove from heat and sprinkle with sesame seeds and green onions
  9. Serve hot over rice or noodles
