One-Pan Lemon Garlic Chicken & Veggies

A quick and easy one-pan meal with vibrant flavors and minimal cleanup.

Ingredients

  • 4 chicken breasts
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced
  • 1 teaspoon dried oregano
  • Salt to taste
  • Pepper to taste

Steps

  1. Preheat oven to 400°F (200°C)
  2. In a large bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper
  3. Add chicken breasts to the bowl and coat well with the marinade
  4. Place the chicken on one side of a baking sheet
  5. Toss broccoli and cherry tomatoes in the remaining marinade and spread them on the other side of the baking sheet
  6. Bake for 20-25 minutes until chicken is cooked through and veggies are tender
  7. Remove from oven and let rest for 5 minutes
  8. Slice chicken and serve with veggies
