Ingredients
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, for garnish
Steps
- Heat olive oil in a large pot over medium heat
- Add minced garlic and sauté for 1 minute until fragrant
- Stir in the chopped bell pepper and zucchini; cook for 3-4 minutes until softened
- Add the quinoa, vegetable broth, chickpeas, cherry tomatoes, oregano, paprika, salt, and pepper
- Bring to a boil, then reduce heat to low and cover the pot
- Simmer for 15-20 minutes until the quinoa is cooked and liquid is absorbed
- Remove from heat and let it sit for 5 minutes, covered
- Fluff the quinoa with a fork and garnish with fresh parsley
