Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tablespoon ginger, grated
- 1 can (14 oz) chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 2 teaspoons curry powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 cups spinach, fresh
Steps
- Heat olive oil in a large pot over medium heat
- Add diced onion and sauté until translucent, about 5 minutes
- Stir in minced garlic and grated ginger, cooking for 1 minute more
- Add chickpeas, diced tomatoes, coconut milk, curry powder, cumin, salt, and pepper
- Bring mixture to a simmer and cook for 15 minutes, stirring occasionally
- Fold in fresh spinach and cook until wilted, about 2 minutes
- Taste and adjust seasoning as needed
