Ingredients
- 12 oz pasta
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 tsp dried thyme
- Salt to taste
- Pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh parsley for garnish
Steps
- Heat olive oil in a large pot over medium heat
- Add diced onion and sauté until translucent, about 5 minutes
