Ingredients

  • 2 cups shredded cheese
  • 1 cup chopped bell peppers
  • 1 cup chopped spinach
  • 4 whole wheat tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt to taste
  • Sour cream for serving (optional)

Steps

  1. Heat olive oil in a skillet over medium heat
  2. Add chopped bell peppers and spinach; sauté for 3-4 minutes
  3. Sprinkle garlic powder, cumin, and salt; mix well
  4. Place a tortilla in the skillet; sprinkle half with cheese and vegetable mixture
  5. Fold the tortilla in half and cook for 2-3 minutes until golden brown
  6. Flip and cook the other side for 2-3 minutes until cheese melts
  7. Remove from skillet and cut into wedges
  8. Repeat with remaining tortillas and filling
  9. Serve with sour cream if desired
