Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup bell peppers, diced
  • 1/2 cup spinach, chopped
  • 1/4 cup onion, diced
  • 1/4 cup cheese, shredded
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Steps

  1. In a bowl, whisk together eggs and milk until well combined
  2. Add salt and pepper to taste
  3. Heat olive oil in a non-stick skillet over medium heat
  4. Sauté onion and bell peppers until softened, about 3-4 minutes
  5. Add spinach and cook until wilted, about 1-2 minutes
  6. Pour egg mixture over the sautéed vegetables in the skillet
  7. Cook without stirring until the edges begin to set, about 3-4 minutes
  8. Sprinkle cheese on one half of the omelette
  9. Fold the omelette in half and cook for another 2-3 minutes until fully set
  10. Slide the omelette onto a plate and cut in half to serve
