Colorful bell peppers filled with a hearty quinoa and vegetable mix, perfect for a nutritious meal.
Ingredients
- 4 large bell peppers
- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- 1 cup diced tomatoes
- 1/2 cup chopped fresh cilantro
Steps
- Preheat the oven to 375°F (190°C)
- Rinse the quinoa under cold water and cook it in vegetable broth according to package instructions
- While quinoa cooks, cut the tops off the bell peppers and remove seeds
- In a large bowl, combine cooked quinoa, black beans, corn, diced tomatoes, cumin, paprika, salt, and cilantro
- Stuff each bell pepper with the quinoa mixture and place them in a baking dish
- Add a splash of water to the bottom of the dish to create steam during baking
- Cover the dish with foil and bake for 25-30 minutes
- Remove foil and bake for an additional 10 minutes to lightly char the tops
- Serve warm, garnished with extra cilantro if desired
