Ingredients

  • 4 chicken breasts
  • 1 lemon (juiced)
  • 4 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup quinoa
  • 2 cups chicken broth
  • 1 cup broccoli florets

Steps

  1. Preheat the oven to 400°F (200°C)
  2. In a bowl, mix lemon juice, minced garlic, olive oil, oregano, salt, and pepper
  3. Coat the chicken breasts in the marinade and let sit for 10 minutes
  4. Place chicken in a baking dish and bake for 25-30 minutes until cooked through
  5. While the chicken bakes, rinse the quinoa under cold water
  6. In a saucepan, combine quinoa and chicken broth, bring to a boil, then reduce heat and simmer for 15 minutes or until liquid is absorbed
  7. Steam the broccoli florets until tender, about 5 minutes
  8. Once the chicken is done, let it rest for 5 minutes before slicing
  9. Fluff the quinoa and serve with sliced chicken and steamed broccoli
