Ingredients

  • 2 cups mixed bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 3 tablespoons soy sauce
  • 1 teaspoon ginger, grated
  • 1 teaspoon sesame seeds
  • Cooked rice for serving

Steps

  1. Heat olive oil in a large skillet over medium-high heat
  2. Add minced garlic and grated ginger, sauté for 30 seconds
  3. Add bell peppers, broccoli, and snap peas to the skillet
  4. Stir-fry vegetables for 5-7 minutes until tender-crisp
  5. Pour soy sauce over the vegetables and mix well
  6. Cook for an additional 2 minutes, stirring constantly
  7. Remove from heat and sprinkle with sesame seeds
  8. Serve over cooked rice
