Ingredients

  • 2 cups pasta
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)

Steps

  1. Heat olive oil in a large pot over medium heat
  2. Add chopped onion and minced garlic, sauté until soft
  3. Stir in diced bell pepper and sliced zucchini, cook for 3-4 minutes
  4. Add cherry tomatoes, pasta, vegetable broth, oregano, salt, and pepper
  5. Bring to a boil, then reduce heat to low and cover
  6. Simmer for 10-12 minutes, stirring occasionally until pasta is cooked
  7. Remove from heat, stir in Parmesan cheese if using
  8. Let sit for 2 minutes before serving
  9. Serve warm and enjoy!
