A low-carb twist on traditional fried rice using cauliflower instead of rice.

Ingredients

  • 1 medium head cauliflower, grated
  • 2 tablespoons olive oil
  • 3 eggs, beaten
  • 1 cup mixed bell peppers, diced
  • 1/2 cup green onions, sliced
  • 1/4 cup soy sauce or tamari
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste

Steps

  1. Grate the cauliflower using a box grater or food processor until it resembles rice
  2. Heat olive oil in a large skillet over medium heat
  3. Add the grated cauliflower and cook for 5-7 minutes until slightly tender
  4. Push the cauliflower to one side of the skillet and pour in the beaten eggs on the other side
  5. Scramble the eggs until cooked, then mix them into the cauliflower
  6. Add the diced bell peppers, green onions, soy sauce, garlic powder, ginger powder, salt, and pepper
  7. Stir everything together and cook for another 3-5 minutes until heated through
  8. Remove from heat and serve immediately
