Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup quinoa
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped

Steps

  1. Preheat oven to 400°F (200°C)
  2. In a bowl, mix olive oil, minced garlic, oregano, thyme, salt, and pepper
  3. Coat chicken breasts with the garlic herb mixture
  4. Place chicken on a baking sheet and bake for 25-30 minutes, until cooked through
  5. Meanwhile, rinse quinoa under cold water
  6. In a pot, combine quinoa and chicken broth; bring to a boil
  7. Reduce heat, cover, and simmer for 15 minutes until quinoa is fluffy
  8. Stir in cherry tomatoes and half of the parsley into the quinoa
  9. Slice the cooked chicken and serve over the quinoa mixture
  10. Garnish with remaining parsley before serving
