Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Steps

  1. Rinse quinoa under cold water
  2. In a pot, combine quinoa and water; bring to a boil
  3. Reduce heat, cover, and simmer for 15 minutes until water is absorbed
  4. Fluff quinoa with a fork and let it cool
  5. In a large bowl, combine black beans, cherry tomatoes, bell pepper, red onion, and cilantro
  6. Add cooled quinoa to the bowl
  7. In a small bowl, whisk together olive oil, lime juice, salt, and pepper
  8. Pour dressing over the salad and toss gently to combine
  9. Serve chilled or at room temperature
