Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Steps
- In a medium pot, combine quinoa and water
- Bring to a boil
- Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed
- Remove from heat and let stand for 5 minutes; fluff with a fork
- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and parsley
- Add the cooked quinoa to the bowl and mix gently
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper
- Pour the dressing over the salad and toss to combine
- Serve immediately or refrigerate for 30 minutes to enhance flavors
