Ingredients

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Steps

  1. Preheat the oven to 350°F (175°C)
  2. Line a muffin tin with paper liners or grease it lightly
  3. In a large bowl, mix mashed bananas, honey, applesauce, and eggs until well combined
  4. In another bowl, combine oats, baking powder, baking soda, salt, and cinnamon
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full
  7. Bake for 18-20 minutes or until a toothpick comes out clean
  8. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack
  9. Enjoy warm or store in an airtight container
