Ingredients
- 4 chicken thighs, boneless and skinless
- 2 cups chicken broth
- 1 cup jasmine rice, rinsed
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 teaspoon dried thyme
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, for garnish
Steps
- Heat olive oil in a large pot over medium heat
- Season chicken thighs with salt and pepper; brown in the pot for about 5 minutes per side
- Remove chicken and set aside; add chopped onion and minced garlic to the pot
