Ingredients

  • 1 cup lentils, rinsed
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 can diced tomatoes (14.5 oz)
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups kale, chopped

Steps

  1. Heat olive oil in a large pot over medium heat
  2. Add chopped onion, carrots, and celery; sauté for 5 minutes until softened
  3. Stir in minced garlic and cook for another minute
  4. Add lentils, diced tomatoes, vegetable broth, thyme, cumin, salt, and pepper
  5. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender
  6. Stir in chopped kale and cook for an additional 5 minutes
