Ingredients
- 1 cup lentils, rinsed
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 can diced tomatoes (14.5 oz)
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 cups kale, chopped
Steps
- Heat olive oil in a large pot over medium heat
- Add chopped onion, carrots, and celery; sauté for 5 minutes until softened
- Stir in minced garlic and cook for another minute
- Add lentils, diced tomatoes, vegetable broth, thyme, cumin, salt, and pepper
- Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender
- Stir in chopped kale and cook for an additional 5 minutes
