  • 2 ripe bananas, mashed
  • 1/2 cup sugar
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Steps

  1. Preheat the oven to 350°F (175°C)
  2. Line a muffin tin with paper liners
  3. In a large bowl, mix the mashed bananas, sugar, oil, vanilla, and egg until well combined
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt
  5. Gradually add the dry ingredients to the banana mixture, stirring until just combined
  6. Fold in the chocolate chips
  7. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean
  9. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely
