Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup bell peppers, chopped
  • 1/4 cup onion, chopped
  • 1/2 cup spinach, chopped
  • 1/4 cup cheese, shredded
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Steps

  1. Whisk together eggs and milk in a bowl
  2. Add salt and pepper to the egg mixture
  3. Heat olive oil in a non-stick skillet over medium heat
  4. Sauté onion and bell peppers until softened, about 3 minutes
  5. Stir in spinach and cook until wilted, about 1 minute
  6. Pour the egg mixture over the vegetables in the skillet
