Ingredients

  • 1 tablespoon coconut oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (400g) diced tomatoes
  • 1 can (400g) chickpeas, drained and rinsed
  • 2 cups fresh spinach
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish

Steps

  1. Heat coconut oil in a large pan over medium heat
  2. Add diced onion and sauté until translucent, about 5 minutes
  3. Stir in minced garlic and grated ginger; cook for 1 minute until fragrant
  4. Add diced tomatoes, chickpeas, curry powder, cumin, and salt; stir well
  5. Simmer for 15 minutes, allowing flavors to meld
  6. Fold in fresh spinach and cook until wilted, about 2-3 minutes
  7. Taste and adjust seasoning if necessary
  8. Serve hot, garnished with fresh cilantro
