A nutritious and colorful quinoa bowl packed with Mediterranean flavors.
Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Steps
- In a medium saucepan, combine quinoa and water
- Bring to a boil
- Reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy
- Remove from heat and let sit for 5 minutes, then fluff with a fork
- In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and olives
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper
- Add the cooked quinoa to the vegetable mixture
- Pour the dressing over the quinoa and veggies, mixing well
- Top with crumbled feta cheese
- Serve warm or chilled
