Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, frozen or fresh
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Steps

  1. In a saucepan, bring water to a boil
  2. Add quinoa, cover, and reduce heat to low
  3. Cook for 15 minutes until quinoa is fluffy; let it cool
  4. In a large bowl, combine black beans, cherry tomatoes, corn, avocado, and cilantro
  5. In a small bowl, whisk lime juice, olive oil, salt, and pepper
  6. Add cooled quinoa to the large bowl and mix gently
  7. Pour dressing over the salad and toss to combine
  8. Serve immediately or chill for 30 minutes before serving
