Ingredients
- 1 cup quinoa
- 2 cups water
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Steps
- Rinse the quinoa under cold water
- In a saucepan, combine quinoa and water; bring to a boil
- Reduce heat, cover, and simmer for 15 minutes until water is absorbed
- Remove from heat and fluff quinoa with a fork; let it cool
- In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, and parsley
- Add the cooled quinoa to the bowl
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper
- Pour the dressing over the salad and toss gently to combine
- Serve chilled or at room temperature
