Ingredients
- 4 large bell peppers
- 1 cup cooked quinoa
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup diced tomatoes
- 1/2 cup shredded cheese (optional)
- Salt and pepper to taste
- Fresh cilantro for garnish
Steps
- Preheat oven to 375°F (190°C)
- Cut the tops off the bell peppers and remove seeds
- In a large bowl, mix cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper
- Stuff each bell pepper with the quinoa mixture
- Place stuffed peppers upright in a baking dish
- Cover with foil and bake for 25 minutes
- Remove foil, sprinkle cheese on top if using, and bake for an additional 10 minutes
- Garnish with fresh cilantro before serving
