Delicious and healthy vegetable fritters made in the air fryer, perfect for a snack or side dish.

Ingredients

  • 2 cups grated zucchini
  • 1 cup grated carrots
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil spray

Steps

  1. Preheat the air fryer to 380°F (190°C)
  2. In a large bowl, combine grated zucchini, grated carrots, flour, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper
  3. Mix until well combined and a thick batter forms
  4. Scoop tablespoon-sized portions of the mixture and form into small patties
  5. Spray the air fryer basket with olive oil spray to prevent sticking
  6. Place the fritters in a single layer in the air fryer basket, making sure they do not touch
  7. Spray the tops of the fritters lightly with olive oil spray
  8. Cook for 12-15 minutes, flipping halfway through, until they are golden brown and crispy
  9. Remove from the air fryer and let cool slightly before serving
  10. Enjoy with your favorite dipping sauce!
