Ingredients
- 4 chicken breasts
- 2 tablespoons olive oil
- 1 lemon (juiced and zested)
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups broccoli florets
- 1 cup cherry tomatoes
- 1 red bell pepper (sliced)
- 1 medium onion (sliced)
Steps
- Preheat the oven to 400°F (200°C)
- In a large bowl, mix olive oil, lemon juice, lemon zest, oregano, garlic powder, salt, and pepper
- Add chicken breasts to the marinade and coat well
- Let sit for 10 minutes
