Ingredients
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Steps
- Heat olive oil in a large pot over medium heat
- Add onion and garlic; sauté until onion is translucent
- Stir in bell pepper and zucchini; cook for 3-4 minutes
- Add quinoa, vegetable broth, cherry tomatoes, and oregano
- Bring to a boil, then reduce heat to low and cover
- Simmer for 15-20 minutes, or until quinoa is fluffy and liquid is absorbed
- Season with salt and pepper to taste
- Remove from heat and let sit for 5 minutes
- Fluff with a fork and garnish with fresh parsley before serving
