Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • Salt and pepper to taste

Steps

  1. Preheat the oven to 400°F (200°C)
  2. In a large bowl, combine olive oil, minced garlic, oregano, paprika, salt, and pepper
  3. Add chicken breasts to the bowl and coat them evenly with the mixture
  4. Place the chicken on one side of a large baking sheet
  5. On the other side, arrange the sliced bell pepper, zucchini, and cherry tomatoes
  6. Drizzle any remaining marinade over the veggies
