Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Steps

  1. Rinse the quinoa under cold water

  6. Add cooked quinoa to the vegetable mixture
  7. Pour the dressing over the quinoa and vegetables; toss to combine
  8. Serve immediately or chill in the fridge for later
