  • 2 lemons (juiced)

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber (diced)
  • 1 bell pepper (diced)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup feta cheese (optional)

Steps

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper
  2. Add chicken breasts to the marinade, ensuring they are well coated
  3. Marinate for at least 20 minutes
  4. Rinse quinoa under cold water

  8. In a large bowl, combine cooked quinoa, cucumber, bell pepper, and parsley
