Ingredients

  • 4 large bell peppers
  • 1 cup cooked brown rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Steps

  1. Preheat the oven to 375°F (190°C)
  2. Cut the tops off the bell peppers and remove the seeds
  3. In a large bowl, mix cooked rice, black beans, corn, cumin, chili powder, diced tomatoes, salt, and pepper
  4. Stuff each bell pepper with the rice mixture, pressing down to pack it tightly
  5. Place the stuffed peppers upright in a baking dish
  6. Sprinkle cheese on top of each pepper
  7. Cover the dish with foil and bake for 25 minutes
  8. Remove the foil and bake for an additional 10 minutes until cheese is melted
  9. Garnish with fresh cilantro before serving
