Ingredients
- 4 chicken thighs
- 1 cup rice
- 2 cups chicken broth
- 1 lemon (juiced)
- 4 cloves garlic (minced)
- 1 cup broccoli florets
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
- 1 teaspoon dried oregano
Steps
- Heat olive oil in a large skillet over medium heat
- Season chicken thighs with salt, pepper, and oregano, then add to the skillet
- Brown chicken on both sides for about 5 minutes each
- Add minced garlic and sauté for 1 minute until fragrant
- Pour in the rice and stir to combine with chicken and garlic
- Add chicken broth and lemon juice, then bring to a simmer
